A cupcake (also British English: fairy cake; Australian English: patty cake or cup cake) is a small cake designed to serve one person, frequently baked in a small, thin paper or aluminium cup.

Modern cupcake, normally contain a combination of flour, sugar, eggs, and butter or oil, with some varieties also requiring liquid (typically milk or water) and leavening agents (such as yeast or baking powder). Flavourful ingredients like fruit purées, nuts, dried or candied fruit, or extracts are often added, and numerous substitutions for the primary ingredients are possible. Cupcake are often filled with fruit preserves, iced with butter cream or other icings, and decorated with marzipan, piped borders or candied fruit.

Good cupcake should literally "melt in your mouth." Cupcake cooks at about 150 degrees. While melting the cupcake should feel rich and luscious in the mouth. Examine the texture of the cupcake, it can vary from smooth to grainy. Good cupcake has a rich, velvety texture. Poor quality cupcake feels waxy or greasy.

Finally, taste the cupcake. Like with smelling the cupcake, pay attention to the flavours that just pop into your head. Spend time being aware of how the flavours change over time as the cupcake continues to melt and coat more in the mouth.

As the last of the cupcake leaves the mouth, the lingering flavour is known as the 'finish' of the cupcake. Good cupcake should have a complex, interesting finish that is not bitter or unpleasant. The finish is an important part of the tasting, as many of the early flavours may be masked by other ingredients in the cupcake.
